Project Title: Flavour Improvement of Foods Containing Pea Fractions

 

Description: The objective of this project is to determine the functionality and acceptability of commercial field pea fractions in 4 food product systems. This project will focus on assessing the functionality of these fractions in food applications and determining threshold levels of acceptance of off flavours in these foods.
